Has anybody made their own steering shaft to go from a Sierra steering column to a mk2 escort steering rack?

Try checking with Stock car products or Summit Racing. They carry most pieces to make whatever you want

You can buy the splined ends from car builders solutions - https://www.carbuilder.com/uk/double-ended-splined-shaft

I have straightened out the steering shaft and removed the collapsible part to save weight off the car as I only use it for racing and track days, doing this saved 5kg

If you need help contact Andy or Dennis Silman at Siltech Racing

I also got them to make new light weight uprights, hub and wish bones which saved another 25kg

This is what the engine bay looks like now with the steering column changes.
